Ingredients

2-4 oz. salmon fillets (thawed)
1/2 tsp. turmeric powder
1/2 tsp. ground black pepper
1/2 tsp. salt
1 tbsp. canola oil
1/2 cup plain Greek yogurt
1 tbsp. lemon juice
1 tbsp. fresh chopped dill (or 1 tsp. dried)
2 whole grain buns
1/2 cup arugula
This spiced salmon sandwich recipe was created by Dezi Abeyta, "The Dad Dietitian," as part of Eat Seafood America!, an effort to help Americans stay healthy and support seafood communities

Instructions

1.Preheat oven to 425 degrees, and while this is heating, add spices to salmon fillet.
2.Place an oven-safe pan on the stove over high heat. Once the pan is warm, add oil and let that warm for a couple minutes. Add salmon and sear for 1-2 min on each side.
3.Put the pan in the pre-heated oven (make sure your pan is oven-safe or use a sheet pan). Bake for 8-10 minutes.
4.Meanwhile make your dill yogurt sauce by mixing the greek yogurt, lemon juice and chopped dill in a blender (or whisk well by hand).
5.Once the salmon is done, let cool for a couple minutes then then assemble all ingredients on the sandwich.

We love a good salmon sandwich! However, this spiced-salmon fillet is also good on its own, over some seasoned rice, or in a bowl. Feel free to personalize this recipe, experiment with the flavors to make it your own.
