Salmon and Asparagus Foil Packet Recipe • Seafood Nutrition Partnership

Ingredients

2 salmon fillets
3 tablespoons of vegetable broth
Fresh lemon juice to taste
4 teaspoons minced garlic
Salt to taste
Black pepper to taste
1/2 stick of butter (4 tablespoons), cut into cubes
1 pound medium-sized asparagus, trim ends

Instructions

1.Preheat your oven to 425ºF
2.Cut 2 sheets of heavy-duty aluminum foil
3.In a bowl, combine vegetable broth and lemon juice
4.Season both sides of the salmon with salt and pepper to taste
5.Add one salmon filet and trimmed asparagus to each sheet of foil
6.Add garlic on top of salmon and asparagus.
7.Add the sauce generously over the salmon and asparagus.
8.Divide butter evenly into the foil packets, layering them over the salmon and asparagus.
9.Wrap the foil packet edges together and wrap the ends, leaving room for the heat to circulate.
10.Add foil packets to baking sheet and bake salmon in the oven, until salmon has cooked through, about 10-13 minutes.
11.Add with lemon juice if desired.
