Easy Baked Red Snapper • Seafood Nutrition Partnership

Ingredients

3/4 cup of water
3/4 cup of lemon juice
1/4 green bell pepper
1/4 red bell pepper
1/4 yellow bell pepper
1 sweet onion
6 cloves garlic
1/2 bunch parsley
7 green onions
4 celery sticks
1 habanero pepper
2 Tbsp. olive oil or grapeseed oil
1 Tbsp. sea salt
1 1/2 lbs. red snapper fillet

Instructions

1.Add water, lemon juice, all vegetables, oil and salt to blender. Blend to smooth texture (not completely liquify).
2.Pour marinade on top of snapper fillet, marinate overnight or for at least 30 minutes for best results.
3.Preheat oven to 400 degrees F.
4.Oil an oven-safe dish. Place snapper fillet in the dish, making sure the fish is covered in the marinade.
5.Bake at 400 degrees for 15-20 minutes, depending on the thickness of the snapper.
6.Remove from oven and serve with sides of choice!
