Seared Salmon Kale Salad With Apple and Peanuts

Ingredients

Four 5 oz salmon fillets (about 1 inch thick)
Salt and pepper to taste
Salad Mix:
6 cups of kale (ribs removed)
1 honeycrisp apple
3 tbsp. of roasted peanuts (sliced or crushed)
1/4 cup grated parmesan
Salad Dressing:
3 tbsp. of lemon juice
3 tbsp. olive oil
Salt to taste
Prepare this nutritious kale salad with peanuts, apples, and Vital Choice salmon. It's easy, filling, and makes a quick meal!

Instructions

1.Thaw salmon fillet(s) at room temperature at least 10 minutes before cooking
2.Combine lemon juice, olive oil, and salt in a mixing bowl
3.Add kale to large bowl and mix with lemon salad dressing and gently toss, set aside
4.Slice apples and crush peanuts. Combine with kale and toss
5.Preheat skillet on medium heat. Once heated, add 2 tbsp. of olive oil and allow the oil to heat up
6.Cut salmon filets into 1x1 inch cubes, season with salt and pepper to taste. Place cubes on to the pan skin-side down and sear until golden brown, about 4 minutes. Then, flip and finish cooking on the other side, for another 2-3 minutes
7.Serve salmon cubes on top of plated kale salad and grate parmesan cheese
