Ingredients

1 lb. ocean perch fillets, rinsed and patted dry with paper towels
1 egg, lightly beaten with salt and pepper
1 Tbsp fresh lemon juice
2.5 cups panko bread crumbs
Salt to taste
2 tsp lemon pepper

Instructions

1.First, preheat the oven to 350 degrees. Line a baking pan with parchment paper and spray with non-stick spray. Next, add beaten egg and lemon juice to a bowl and mix with a fork.
2.Add panko bread crumbs to a separate plate and mix in salt and lemon pepper.
3.Dip fish fillets into egg and then press into panko bread crumbs. Place onto baking sheet. Repeat with remaining fish.
4.Bake for 15 - 20 minutes until fish has darkened and flakes easily with a fork. Serve with lemon wedges.
