Mustard Baked Mackerel • Seafood Nutrition Partnership

Ingredients

2 Tbsp. mustard, dijon
1 Tbsp. mayonnaise
Salt and pepper, to taste
2 Tbsp. olive oil, divided
1 lb. mackerel fillets
2 zucchinis, small, cut into rounds
1 tsp. rosemary, dried

Instructions

1.Heat oven to 375°F.
2.Mix mustard, mayonnaise and some salt and pepper, to taste.
3.Lightly coat sheet pan with a little olive oil. Place fish onto pan and lightly spread mustard mixture on fish.
4.Mix zucchini and rosemary with S&P and remaining olive oil.
5.Bake zucchini in oven for 15 minutes.
6.Serving Suggestion: Can be served with brown rice or wild rice.

Mustard Baked Mackerel is a flavorful dish the whole family will enjoy. Not only is this entree full of omega-3s, it’s also budget friendly.
