Mustard Baked Mackerel is a flavorful dish the whole family will enjoy. Not only is this entree full of omega-3s, it’s also budget friendly.

| 2 Tbsp. mustard, dijon | |
| 1 Tbsp. mayonnaise | |
| Salt and pepper, to taste | |
| 2 Tbsp. olive oil, divided | |
| 1 lb. mackerel fillets | |
| 2 zucchinis, small, cut into rounds | |
| 1 tsp. rosemary, dried |

| 1. | Heat oven to 375°F. |
| 2. | Mix mustard, mayonnaise and some salt and pepper, to taste. |
| 3. | Lightly coat sheet pan with a little olive oil. Place fish onto pan and lightly spread mustard mixture on fish. |
| 4. | Mix zucchini and rosemary with S&P and remaining olive oil. |
| 5. | Bake zucchini in oven for 15 minutes. |
| 6. | Serving Suggestion: Can be served with brown rice or wild rice. |
