Tired of the traditional avocado toast? Grab some toast and simply add a bit of lobster on top of a layer of tomatoes and avocado! This is a seafood twist that’s both easy to make and easy to love.

| 2 slices fresh whole grain bread | |
| 4-5 oz. of cooked lobster meat | |
| 2 fresh avocados | |
| 1 vine ripe tomato, chopped | |
| 1/2 c red onion, diced | |
| 1 tsp lemon juice | |
| 2 small fresh jalapenos, sliced thin |

| 1. | Toast grain bread slices to light brown toast. |
| 2. | Prepare fresh avocado spread by mixing avocado, chopped tomatoes, diced red onion, and lemon juice. Smash gently and spread on toast. |
| 3. | Top fresh avocado with lobster meat. |
| 4. | Layer thinly sliced jalapeno over lobster meat. |
| 5. | Sprinkle with fresh chives and serve |
