Ginger, diced1/3 c vegetable broth2 medium fresh tomatoes, chopped4 cod fillets½ c tomato sauce1 whole red bell pepper, sliced1 whole green pepper, sliced½ tsp curry powder ½ tsp cumin½ tsp paprika1 tbsp fresh cilantroSalt & pepper to tasteThis Fish Stew is simple, flavorful and tasty. It takes less than 30 minutes from start to finish, and you can use your favorite firm, white fish! Instructions1.Start with oil in a large skillet. Add onion and garlic, ginger, cook until fragrant (3 mins).2.Then, add fresh tomatoes, curry powder, cumin, paprika. (cook for 2 minutes) 3.Add tomato sauce and broth, then stir. Give mixture a stir and allow it to cook for about 5 minutes or until the tomatoes give a darker color.4.Next add sliced peppers and cod chunks. Season with salt, pepper. Cover and allow fish to simmer for 10-12 minutes. About 3/4 of the way carefully turn the cod pieces.5.When done, remove from stove and sprinkle fresh cilantro. Serve over quinoa or rice.
