1 medium cucumber, peeled, seeded and cut into 1/2-in. dice
1/2 to 1 cup fresh tomato, cut into 1/2-in. dice
1/4 cup chopped cilantro
2 tablespoons fresh lime juice
Freshly ground black pepper
If using frozen shrimp, boil (with slices of lemon in water) until cooked; if frozen
shrimp are already cooked, boil until warmed through. Combine all ingredients
and refrigerate in covered bowl until ready to serve. Serve on a bed of lettuce.
