Recipe From the Heart: Fish Tacos

Fish Tacos from From the Heart recipe book
Insider tip: Soft corn tortillas are very low in sodium and don’t crumble with your first bite.

Makes 10 tacos
​
INGEDIENTS
  • 10 small soft whole-grain corn tortillas
  • 1 lb. halibut or other firm white fish, skin and bones removed
  • ¼ tsp. kosher salt
  • freshly ground black pepper
  • 1 Tbs. extra-virgin olive oil
  • 2 cups shredded romaine and/or red cabbage
  • ½ lime, cut into wedges (optional)
  • Guacamole or Creamy Cilantro Sauce (see full recipe below for sauce instructions)

​INSTRUCTIONS
  1. Heat the tortillas according to the package instructions. Wrap them tightly in foil and keep warm.
  2. Prepare all the toppings before you sauté the fish.
  3. Pat the fish dry with paper towel. Season with up to ¼ tsp. of salt and pepper to taste.
  4. In a large non-stick pan, heat the oil over medium heat until shimmering hot. Sauté the fish until lightly browned and cooked through, 2-3 minutes per side. Remove from the pan to a warm plate.
  5. Assemble the tacos: Put a little shredded lettuce and/or cabbage in first, add a small piece of fish, and top with a little Guacamole or Creamy Cilantro Sauce. Add a squeeze of lime juice if you like.
