How did you get involved with Seafood Nutrition Partnership Indianapolis?
At Chef Joseph’s, I have played a major part in bringing fresh seafood to Indianapolis. Even since 1995 when I opened the California Café, fresh seafood has always been on my mind. When I heard that Seafood Nutrition Partnership was coming to Indianapolis, it seemed like a perfect fit.
Why do you think it’s important to educate Hoosiers about the health benefits of seafood?
As a chef, I love to have multiple proteins on my menu, and seafood allows for a variety of healthy choices. I am working with many seafood companies today, and the Monterey Bay and International Seafood Watch help me make good, sustainable seafood choices. I especially enjoy the fishology tags that provide the information on how and where the fish was caught. Providing seafood adds omega- 3 fatty acids, which are necessary essential fats for human health and development. Getting Hoosiers to eat seafood 2-3 times a week helps prevent cardiovascular disease up to 36%! And since this disease has touched so many dear friends, it is an issue that I feel is important to address.
What’s your favorite seafood dish?
One of my favorite and Chef Joseph’s most popular seafood dishes is Herb Crusted Halibut, seasonal greens and asparagus tips with spiced walnut oil.
