Mr. Craig Stewart Trustee and President, Apex Charitable Foundation
Tell the readers a little about yourself. 74 years old, currently a trustee and President of Apex Charitable Foundation in Bellevue, WA
What prompted you to start eating more seafood? Fifteen years ago for my annual physical I had a heart scan. Three of my arteries were 75% clogged with plaque. I was a heart attack waiting to happen. I thought I was in great shape working out every day and weight holding steady at about 170. I gave up red meat and dairy products and switched to a diet rich in Omega 3s – namely salmon – in fact other fish as well. I’m heavy on fruits and vegetables as well.
What is your advice for adding seafood into regular meals? I love the different ways seafood can be prepared and I eat fish at least three times a week.
Have you added omega-3 supplements? I’m getting all the supplements I need from natural seafood!
Tell us about your positive health improvements since including more seafood and taking in more omega-3s into your diet. Just had a physical several weeks ago. HDL Cholesterol 95 and LDL 87; blood pressure 112/65, repeat heart scan showed plaque had largely disappeared. I’m convinced that changing my diet and lifestyle saved my life!
