A few years ago I decided to make a New Year’s resolution that I might actually be able to keep: eat salmon once a week. This turned out it to be a great idea for a resolution—very easy to do and delicious. And it’s right in line with the Seafood Nutrition Partnership’s Healthy Heart Pledge. After that first year, we’re still doing it, and as a result we enjoy the benefits of Omega 3s in what’s often called the “world’s healthiest food.” We love grilled salmon, and order it out or make it at home. We also enjoy salmon cakes made from canned salmon like Mom used to make. Don’t overlook the options for canned salmon, whether in salmon cakes or salmon loaf. Those retro recipes are easy and yummy. I keep a couple of cans in the pantry, and it makes an easy meal on a weeknight. Add an egg and some breadcrumbs, with a little minced onion and celery, form into patties dipped in bread crumbs and saute in a skillet. Pair with a salad and vegetables, and it’s an easy and healthy weeknight dinner!
